Tribute ' Lady Pamela' Chardonnay

Description

Shiny white gold in the glass.  Perfumes of fine white flowers, hard stone fruit and freshly crushed macadamia.  A taught palate displays freshness of white stone fruits with an abundance of savoury elements.  A custard tart creaminess runs through the palate, cushioning and encapsulating the entire length of the wine.  Warm toast notes bring a savoury underpinning element.

Winemaking Notes

Fruit was selected from a single block of premium Gin Gin clone Chardonnay, hand harvested and whole bunch pressed.

Cloudy juice was racked to French oak puncheons. Natural alcoholic and malolactic fermentation taking place in a combination of 20% new, 60% second fill and 20% old oak followed by maturation for a period of 9 months prior to blending.

Prosciutto wrapped pork fillet, pear slices, French wholegrain mustard, maple syrup, and caramelized red onion.
