A bright and lively sparkling from a blend of premium, estate grown Chardonnay and Pinot Noir fruit. The wine shows lifted citrus and white acacia on the nose, with a full, balanced palate of golden apples, macademia and hints of toasty brioche. A gentle, creamy mousse leads to a long finish.

Winemaking Notes

Chardonnay and Pinot Noir parcels were pressed and fermented seperately at cool temperatures to retain their delicate aromatics. A portion of each was fermented in one year old French Oak to introduce complexity and weight to the blend, with the balance produced in stainless steel tanks. Secondary fermentation occured in tank (Charmat method) and the final wine was bottled under pressure.

Growing Conditions

Fruit for this non vintage (NV) blend was sourced from a series of parcels across multiple vintages, with the majority comprising of vintage 2018 grapes. This vintage saw enormously favourable conditions, characterised by long stretches of warm days that were devoid of harsh heat spikes or rain. Cool nights allowed the grapes to retain acidity, leading to good yields of healthy fruit. Harvest was quite compressed, resulting in a shorter than average vintage duration.

Fruit for this wine was sourced from a blend of approximately 80% clone 76 and Mendoza Chardonnay and 20% clone MV6 Pinot Noir. Parcels were both hand harvested slightly earlier than their still wine counterparts to ensure an optimal sugar- acid balance for the production of sparkling wine.
