THE WINE
Coombe Chardonnay is one of our flagship wines. Pale straw to white gold in colour, this Chardonnay has a generously perfumed nose of ripe red apple, white nectarine and lemon curd with a savoury element of fresh toast. The palate has a juiciness of stone fruit and a brightness of citrus, while a creamy texture is supportive and flowing through with an elegant finish.
THE VINTAGE
The 2025 vintage can be considered broadly favourable across most varieties. Spring conditions were notably stable—arguably the most “normal” in recent years—with average monthly rainfall and slightly warmer-than-usual temperatures.
Summer brought a shift, marked by drier conditions and sustained warmth, especially in February, which saw eight days exceed 35°C. To support ripening, substantial supplementary irrigation was necessary to maintain optimal moisture levels.
Harvest commenced early, kicking off on 5 February. Remarkably, by 1 March, nearly all fruit had been picked.
VITICULTURE + WINEMAKING
Hand-made using a selection of our A block Mendoza and B block Gin Gin clone Chardonnays, both grown on the lower lying section of our vineyard. Early dawn hours for harvest of fruit at its coldest, then pressed to tank. The coarsely settled juice, remaining slightly cloudy, was racked to 500 L French oak puncheons made up of 10% new and 90% seasoned. Fermented sugar dry, in a temperature-controlled room, followed by a portion of malolactic, the wine matured on lees for 10 months prior to blending for bottling.

Keep it simple, oysters natural and king prawns with a squeeze of lemon juice.
