THE WINE
A medium to full bodied Cabernet which offers a mélange of dark cherry, briar, sweet burnt toffee, and dried autumn leaf spice. A warm palate of juicy cherry, black currants and velvet tannin run the length of this wine. Full and juicy, the fruit is supported by almost invisible oak elements. Cabernet that may be enjoyed now but will reward the patient cellar over the medium term.
THE VINTAGE
The rainfall through the 2021 winter and spring set-up ideal soil moisture levels for vintage 2022. After a cool and wet early spring, conditions warmed and dried as summer progressed. January was sunny and occasionally hot. Both February and March were very favourable and ultimately a near perfect season culminated in ripe grapes ideally suited for premium Yarra Valley wines.
VITICULTURE + WINEMAKING
This wine is a blend of clones, 47% harvested from the low laying block E being selection SA125 clone, and 53% of block F made up of WA Cape and 412 clones taken from upon the west facing hill. Winemaking is very traditional in the winery, basically without intervention. Fermented in open pots, the fruit is very much treated as the hero. Gentle pump overs and the cooler year ensured even fermentation temperature. Pressed on dryness and racked to small French oak barrels for a 13-month maturation, before assemblage to tank and bottling.
FOOD MATCH
Salt and pepper crusted beef rib, with cabernet, thyme, and mushroom reduction.
